When I think of the perfect recipe to serve my mom for Mother’s Day, french toast is the clear winner. It’s her favorite when it comes to decadent weekend breakfast or brunch menus. Since Mother’s day is so close to Orthodox Easter this year, what better way to make a french toast casserole than by using a loaf of Tsourkei (which is served at Easter). Plus, it’s my first Mother’s Day, and this dish speaks to my sweet tooth so it’s a win-win! But it doesn’t have to be a special occasion to make and enjoy this delectable Tsoureki French Toast Bake, make it anytime you have leftover tsoureki! 

Why Use Tsoureki Bread

How to Make Tsoureki French Toast Bake

  1. Cut the bread into 1” pieces. 
  2. Layer the bread pieces in the bottom of a greased baking dish. 
  3. Whisk the eggs in a bowl and add in the Greek yogurt, almond milk, honey, almond and vanilla extracts, and cinnamon and combine.
  4. Pour the egg mixture over the bread, toss to ensure all of the pieces get coated.
  5. Cover the baking dish with foil and place it in the refrigerator overnight.

Ready to bake

When you are ready to bake your tsoureki french toast, take it out of the refrigerator and allow it to come to room temperature. Meanwhile, preheat the oven to 350 degrees. Before going into the oven, sprinkle the top of the casserole with sliced almonds. Bake, covered for 40 minutes then remove the foil and bake for another 10-15 minutes. Allow it to cool slightly before serving. You can top your tsoureki french toast slice with additional cinnamon and honey or maple syrup.

This recipe also holds up well in the refrigerator after baking. So if you have leftover Tsoureki French Toast Bake just pop it in the fridge and heat up a square in the microwave the next morning!

Tsoureki French Toast Bake

This is the ultimate weekend breakfast or brunch overnight french toast casserole made with Tsoureki, Greek sweet bread. It’s easy to make and a real crowd pleaser!

Ingredients
  

  • 1 loaf Tsoureki (Greek Sweet Bread)
  • 6 eggs
  • ½ cup Greek yogurt plain
  • cups unsweetened almond milk
  • cup honey
  • ¼ tsp almond extract
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • ½ cup sliced almonds

Instructions
 

  • Cut the bread into small pieces. Spray a 8X11” glass pan with cooking oil and layer the bottom with the bread pieces.
  • In a medium sized bowl whisk the eggs together. Then add in the greek yogurt, milk, honey, almond amd vanilla extract, cinnamon and whisk to combine. 
  • Pour the egg mixture evenly over the bread and push the bread down to ensure it gets soaked in.
  • Cover the pan with aluminum foil and refrigerate overnight.
  • When ready to bake allow the French toast to come to room temperature. Sprinkle the top with sliced almonds. 
  • Preheat the oven to 350 degrees. Bake the French toast covered for 40 minutes, then remove the aluminum foil and bake for an additional 10-15 minutes until the top is golden brown. 

Notes

  • Depending on the size of your tsoureki loaf, you may only use half or 3/4 of a loaf to fill the 8X11″ pan.
