Tsoureki French Toast Bake
This is the ultimate weekend breakfast or brunch overnight french toast casserole made with Tsoureki, Greek sweet bread. It’s easy to make and a real crowd pleaser!

- 1 loaf Tsoureki (Greek Sweet Bread)
- 6 eggs
- ½ cup Greek yogurt plain
- 1½ cups unsweetened almond milk
- ⅓ cup honey
- ¼ tsp almond extract
- 1 tsp vanilla extract
- 1 tbsp cinnamon
- ½ cup sliced almonds
Cut the bread into small pieces. Spray a 8X11” glass pan with cooking oil and layer the bottom with the bread pieces.
In a medium sized bowl whisk the eggs together. Then add in the greek yogurt, milk, honey, almond amd vanilla extract, cinnamon and whisk to combine.
Pour the egg mixture evenly over the bread and push the bread down to ensure it gets soaked in.
Cover the pan with aluminum foil and refrigerate overnight.
When ready to bake allow the French toast to come to room temperature. Sprinkle the top with sliced almonds.
Preheat the oven to 350 degrees. Bake the French toast covered for 40 minutes, then remove the aluminum foil and bake for an additional 10-15 minutes until the top is golden brown.
- Depending on the size of your tsoureki loaf, you may only use half or 3/4 of a loaf to fill the 8X11" pan.
