Not only is this skillet absolutely delicious, but it’s loaded with all the good ingredients you need to make a hearty breakfast that will actually stick with you. Not a breakfast fan? No problem, this skillet recipe can be one of those breakfast dinner meals when you’re looking for something quick, filling and incredibly tasty. How to make this Mediterranean Skillet Breakfast

This really is a very easy recipe to follow. Why make mornings any more complicated than they have to be?!  We know that once you make this recipe for Mediterranean Skillet Breakfast it’ll become an instant favorite!

Heat 2 tablespoons olive oil in a large skillet to medium heat. Add in the diced onions and peppers, and cook until onions begin to soften. Next, add in your diced potatoes and season with pepper and oregano. Cook until tender and golden brown, about 15 to 20 minutes, stirring occasionally. You’ll want some yummy crispy edges to your potatoes to really add some texture to this dish!  Once the potatoes are cooked, add in the cherry tomatoes and half of the feta cheese, gently mix.  Make three wells in the pan and break one egg into each well. Cover with a lid, lower the heat and cook for 5-7 minutes until eggs are cooked through. Top with remaining feta cheese and a sprinkle of dill. Serve immediately right from the pan–no extra serving dish needed!  From stovetop to table in just about 30 minutes!

You can make this skillet breakfast in a variety of ways with the addition of a few different ingredients. If you like your breakfast a bit spicier, add in some red pepper flakes or a splash of tabasco sauce before serving.
