Mediterranean Breakfast Skillet

Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion diced
  • 1 yellow bell pepper diced
  • 3 potatoes cubed
  • 1 tsp dried oregano
  • 1 tsp pepper
  • 1 cup cherry tomatoes halved
  • 3 eggs
  • ¾ crumbled feta cheese
  • 1 tsp fresh dill

Instructions
 

  • Heat 2 tablespoons olive oil in a large skillet to medium heat.
  • Add in the diced onions and peppers, and cook until onions begin to soften.
  • Next add in your diced potatoes and season with pepper and oregano. Cook until tender and golden brown, about 15 to 20 minutes, stirring occasionally.
  • Once the potatoes are cooked, add in the cherry tomatoes and half of the feta cheese, gently mix. 
  • Make three wells in the pan and break one egg into each well. Cover with a lid, lower the heat and cook for 5-7 minutes until eggs are cooked through.
  • Top with remaining feta cheese and a sprinkle of dill. Serve immediately right from the pan--no extra serving dish needed!  Enjoy
