Do you find it hard to make breakfast every morning during the chaos of getting you and your family ready? One way to make sure everyone gets a nutritious meal is to make it ahead of time. We’re not talking about portioning out processed foods and cereals, but a warm and hearty Baked Oatmeal. Bake up a fresh pan on Sunday and stop worrying about breakfast for the rest of the week!

The main ingredient in this recipe is, you guessed it, OATS!  We love oats for their many heart health benefits like helping to lower bad cholesterol and blood sugar. Plus they have fiber which helps keep you full and aid in digestion.

Of course we didn’t stop with only one heart-healthy ingredient, we added walnuts, almonds, chia seeds, and cinnamon. Oh, did we mention this recipe is vegan too? As an egg substitute we made flax eggs and used unsweetened almond milk instead of dairy milk.

Keeping on the hearty healthy ingredient train we used fruit to sweeten this oatmeal. You can always find a bag of frozen blueberries in our freezer. They’re a superfruit that can be added to smoothies, yogurt, and pancakes. So of course we had to incorporate them into this recipe. Plus, we need to use the 9 pound bag of blueberries sitting in our freezer!

Blueberries are big immune boosters packed with vitamins and antioxidants which can help to reduce blood pressure, improve skin, aid in digestion and promote bone health. For extra taste and a great binder we also used mashed up ripe bananas. The fruits add a soft burst of flavor as you bite into the oatmeal so feel free to add in other berries and fruits this recipe as well… the more the merrier!

Baked Oatmeal

This vegan baked oatmeal gets its sweetness fruit and a touch of maple syrup and is packed with heart healthy oats and nuts. It’s easy to make and perfect for weekend brunch and meal prepping!

Ingredients
  

  • 2 flax eggs (1 egg = 1 tbsp flax meal + 3 tbsp water)
  • 2 ripe bananas
  • 1 cup unsweetened almond milk
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • lemon zest
  • 2 cups old fashioned oats (can use gluten-free oats)
  • cup chia seeds
  • ¼ cup chopped walnuts
  • ¼ cup almond slivers
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp salt
  • 2 cup frozen blueberries

Instructions
 

  • Preheat oven to 350 degrees F.
  • Spray a 8 x 8” baking dish with cooking spray.
  • In a small bowl whisk together 2 tbsp flax meal with 6 tbsp water and set aside for 10 minutes to thicken.
  • In a large bowl mash the bananas. Add in the almond milk, maple syrup, vanilla extract, lemon zest and flax eggs and stir until all ingredients are incorporated.
  • Next add in all remaining dry ingredients and lastly fold in 1 1/2 cups of the blueberries.
  • Pour the oatmeal mixture into the greased baking dish and sprinkle with the remaining blueberries, pressing them down into the oatmeal mixture.
  • Bake for about 40 minutes or until the top of the oatmeal has started to brown. Allow to cool slightly and serve warm. Store in an airtight container in the refrigerator.

Notes

Optional: Top with additional maple syrup or melted nut butter
