Baked Oatmeal

This vegan baked oatmeal gets its sweetness fruit and a touch of maple syrup and is packed with heart healthy oats and nuts. It’s easy to make and perfect for weekend brunch and meal prepping!

Ingredients
  

  • 2 flax eggs (1 egg = 1 tbsp flax meal + 3 tbsp water)
  • 2 ripe bananas
  • 1 cup unsweetened almond milk
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • lemon zest
  • 2 cups old fashioned oats (can use gluten-free oats)
  • cup chia seeds
  • ¼ cup chopped walnuts
  • ¼ cup almond slivers
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp salt
  • 2 cup frozen blueberries

Instructions
 

  • Preheat oven to 350 degrees F.
  • Spray a 8 x 8” baking dish with cooking spray.
  • In a small bowl whisk together 2 tbsp flax meal with 6 tbsp water and set aside for 10 minutes to thicken.
  • In a large bowl mash the bananas. Add in the almond milk, maple syrup, vanilla extract, lemon zest and flax eggs and stir until all ingredients are incorporated.
  • Next add in all remaining dry ingredients and lastly fold in 1 1/2 cups of the blueberries.
  • Pour the oatmeal mixture into the greased baking dish and sprinkle with the remaining blueberries, pressing them down into the oatmeal mixture.
  • Bake for about 40 minutes or until the top of the oatmeal has started to brown. Allow to cool slightly and serve warm. Store in an airtight container in the refrigerator.

Notes

Optional: Top with additional maple syrup or melted nut butter
