Even though many of us may be working from home during these times, that doesn’t mean when dinner time rolls around we want to be slaving away in the kitchen! This recipe for Skillet Mediterranean Chicken is ready in just about 30 minutes. One of the things we love about this recipe is that it’s all made in one pan! So it makes cleaning up a breeze.

We used a cast-iron skillet which gets the chicken thighs nice and crispy on the outside. The skillet then transfers straight into the oven which allows the chicken to fully cook and stay juicy on the inside. We also used chicken thighs. We love the flavor that chicken thighs have so to keep it healthy we opted for boneless and skinless chicken thighs.

How to Make Skillet Mediterranean Chicken 

  1. Heat: Set the oven to 375 degrees. Heat a cast-iron skillet over medium-high heat on the stovetop. 
  2. Season: Season each side of the chicken thighs with salt and pepper, add olive oil to the heated skillet, followed by the chicken. You want to brown the thighs on both sides. By using the cast iron skillet gets the chicken nice and crispy!
  3. Assemble: Add minced garlic, tomatoes, artichokes and olives to the skillet and stir. Top the chicken thighs with the lemon slices.
  4. Bake: Add the skillet to the oven and cook for 20-25 minutes or until the chicken is fully cooked. Lastly, add the spinach and feta cheese to the skillet and cook until the spinach is wilted. Turn the oven to broil and brown for 1-2 minutes (optional).
  5. Serve: That’s it, all in one pan, now you are ready to enjoy!

What to Serve with Skillet Mediterranean Chicken

This dish can be served with a salad like our Traditional Greek Peasant Salad.  A simple side of rice, quinoa, farro or our Mediterranean Orzo with Swiss Chard, Greek Lemon Potatoes. If you are looking to keep things on the lighter side we recommend one of these vegetable sides, Roasted Carrots with Feta, Horta (Greek Greens), Garlic Green Beans, or Roasted Asparagus with Feta which would be lovely compliments to this Skillet Mediterranean Chicken!

Ingredients
  

  • 6 chicken thighs boneless & skinless
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 cup grape tomatoes
  • ¾ cup artichokes
  • ½ cup kalamata olives
  • 1 lemon sliced
  • 2 cups fresh spinach
  • ¼ cup feta cheese
  • salt and pepper to taste

  • Season each side of the chicken thighs with salt and pepper,  add to the skillet, and brown on both sides.
  • Add garlic, tomatoes, artichokes and olives to the skillet and stir.
  • Top the chicken with the lemon slices and add to the oven. Cook for 20-25 minutes or until chicken is fully cooked.
  • Add the spinach and feta cheese to the skillet and return to the oven and cook until the spinach is wilted. Turn the oven to broil and brown for 1-2 minutes. Serve immediately.
