Ingredients
  

  • 10 ounce pkg edamame shelled
  • 1 English cucumber chopped
  • ½ orange pepper chopped
  • ½ yellow pepper chopped
  • 1 cup feta cheese cubed
  • cup red onion chopped
  • ½ cup kalamata olives pitted
  • ½ cup olive oil
  • lemons juiced
  • ½ tsp salt
  • ½ tsp pepper
  • 3 tbsp fresh parsley chopped

Instructions
 

  • Cook the edamame according to the package instructions.
  • In a large bowl, combine the cooked edamame, chopped cucumber, diced orange and yellow peppers, cubed feta cheese, chopped red onion, and pitted Kalamata olives.
  • In a small bowl, whisk together the olive oil, lemon juice, chopped parsley, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss to coat. Sprinkle additional parsley over the top of the salad if desired. Serve chilled or at room temperature.
