Mediterranean Edamame Salad is a delicious and healthy dish that is packed with flavor and nutrition. We have to admit this just might be our new favorite salad! When summer picnics and barbeques start in full swing this Mediterranean Edamame Salad is the perfect dish to bring!  

This salad is a perfect blend of edamame beans, cucumber, red onion, feta cheese, colorful peppers and Kalamata olives. The salad is dressed with a simple traditional Greek vinaigrette made with olive oil, lemon juice, salt, pepper and parsley which adds an extra layer of deliciousness to the dish. Simple is best, wouldn’t you agree?

Mediterranean Edamame Salad is not only tasty but it also provides numerous health benefits. Edamame beans are a rich source of plant-based protein, fiber, and various vitamins and minerals. The fresh vegetables and olive oil in the salad are also rich in antioxidants and heart-healthy nutrients, making this salad a perfect addition to any healthy diet. Given the rising grocery costs today, this salad provides a budget-friendly and convenient meal solution, in addition to being easy to put together. And you can’t beat that!

Mediterranean Edamame Salad – Main Ingredients

  • Edamame – We used a bag of frozen, shelled edamame, and followed the package instructions. Super simple and ready in under 5 minutes. 
  • Cucumber – We like to use English cucumbers or fresh cucumbers from our garden for this recipe. They are long, and thin and their seeds are much smaller than other varieties.
  • Peppers – Feel free to choose any pepper color that appeals to your taste buds. Our personal favorites are the orange and yellow ones, as they offer a delightful sweetness and flavor. To give the salad an extra kick of spiciness, consider adding some jalapenos or other hot peppers of your liking.
  • Feta Cheese – When it comes to selecting feta cheese for salads, the best type is typically a high-quality, authentic Greek feta cheese made from sheep’s milk or a combination of sheep’s and goat’s milk. These types of feta tend to be more tangy, creamy, and flavorful than the varieties made from cow’s milk. Additionally, look for feta that is sold in a block rather than pre-crumbled, as it will have a fresher taste and texture.
  • Red Onion – We chose red onion for this recipe because red onions have a slightly sweet and m flavor that complements a variety of other ingredients in a salad. Red onions also offer a beautiful pop of color with their vibrant hue. Another alternative to consider is the Vidalia onion, which is also known for its sweetness. However, unlike red onions, it won’t impart a bright color to the salad when mixed with other ingredients.
  • Dressing – For the dressing, we used good-quality olive oil, freshly squeezed lemon juice, fresh parsley, and a touch of salt and pepper. And that’s all there is to it – it’s truly remarkable how such basic ingredients can deliver such an impressive flavor impact!

Assemble and enjoy!

In a large bowl, combine the cooked edamame, chopped cucumber, diced orange and yellow peppers, cubed feta cheese, chopped red onion, and pitted Kalamata olives. In a small bowl, whisk together the olive oil, lemon juice, chopped parsley, salt, and pepper until well combined. This salad stores well. Simply place it in an airtight container and refrigerate for up to 5 days. It makes for a convenient lunch option throughout the week or a side dish to accompany your main course.

Ingredients
  

  • 10 ounce pkg edamame shelled
  • 1 English cucumber chopped
  • ½ orange pepper chopped
  • ½ yellow pepper chopped
  • 1 cup feta cheese cubed
  • cup red onion chopped
  • ½ cup kalamata olives pitted
  • ½ cup olive oil
  • lemons juiced
  • ½ tsp salt
  • ½ tsp pepper
  • 3 tbsp fresh parsley chopped

Instructions
 

  • Cook the edamame according to the package instructions.
  • In a large bowl, combine the cooked edamame, chopped cucumber, diced orange and yellow peppers, cubed feta cheese, chopped red onion, and pitted Kalamata olives.
  • In a small bowl, whisk together the olive oil, lemon juice, chopped parsley, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss to coat. Sprinkle additional parsley over the top of the salad if desired. Serve chilled or at room temperature.
