Greek Chicken Salad

- 3 cups rotisserie chicken
- 1½ cups cucumber peeled and diced
- 1½ cups grape tomatoes chopped
- ½ cup red onion diced
Dressing
- 1 cup plain Greek yogurt
- 1 lemon juiced
- 2 cloves garlic minced
- 2-3 tbsp fresh dill divided
- salt & pepper to taste
Remove the skin from the rotisserie chicken and shred using your hands and add to a large bowl.
In a small bowl combine Greek yogurt, lemon juice, garlic, 1-2 tbsp. dill, salt and pepper to taste, set aside.
Prepare the cucumber, tomatoes and onions and add them to the bowl with the chicken.
Lastly pour the dressing over the chicken and veggies and stir to combine. Serve on pita bread or on top of lettuce.
