What’s in Greek Chicken Salad?

  • Rotisserie chicken – Who doesn’t love a good life hack?! Store-bought rotisserie chicken is key for making this recipe quick!
  • Cucumber – Peeled and diced cucumbers give this salad an extra bite of crunchiness!
  • Grape Tomatoes –  Meaty and less watery than other varieties.
  • Red Onion – Add a mild , crisp, sweet flavor to the salad.

Once the ingredients are prepped and ready to go, all you have to do is stir them together and ta-da, Greek Chicken Salad is served!

Let’s make the dressing!

Normally classic chicken salad contains mayonnaise but in this recipe, we swapped it out for Greek yogurt, giving the dressing that little extra bit of tang! Plain Greek yogurt is such a great substitute for mayonnaise! It has the right texture, less fat and more protein. Combine it with lemon, garlic, dill, salt and pepper, and your dressing is complete! We said this recipe was easy!

How to Serve Greek Chicken Salad

This chicken salad is delicious all on its own! Yes, we eat it by the spoonful right out of the bowl! (Sorry, not sorry) Use it as a salad topper, in a sandwich, as a dip for toasted pita bread, or in a lettuce wrap. The possibilities are endless!

Greek Chicken Salad

This healthy no-mayo Greek Chicken Salad makes the perfect healthy lunch, dinner, or go-to snack. A quick and easy recipe the whole family will love.

Ingredients
  

  • 3 cups rotisserie chicken
  • cups cucumber peeled and diced
  • cups grape tomatoes chopped
  • ½ cup red onion diced

Dressing

  • 1 cup plain Greek yogurt
  • 1 lemon juiced
  • 2 cloves garlic minced
  • 2-3 tbsp fresh dill divided
  • salt & pepper to taste

Instructions
 

  • Remove the skin from the rotisserie chicken and shred using your hands and add to a large bowl.
  • In a small bowl combine Greek yogurt, lemon juice, garlic, 1-2 tbsp. dill, salt and pepper to taste, set aside.
  • Prepare the cucumber, tomatoes and onions and add them to the bowl with the chicken.
  • Lastly pour the dressing over the chicken and veggies and stir to combine. Serve on pita bread or on top of lettuce.
