Avocado Mayonnaise

Low fat, egg-free recipe for mayonnaise alternative made from avocados. Use it as a sauce, dip or spread.

Ingredients
  

  • 2 ripe avocados seeded
  • 2 tsp fresh lemon juice
  • 1 tbsp white wine vinegar
  • 1 tbsp water
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp extra virgin olive oil

Instructions
 

  • Halve avocados, remove pits and scoop out the flesh.
  • Combine all ingredients in a blender or food processor except oil, blend until smooth.
  • Add oil in a slow stream.
  • Once the oil has been added, continue to blend for one minute.
  • Once the desired consistency is achieved scoop the mixture into a bowl and its ready to use!

Notes

  • Serving size is per cup
  • Store in the refrigerator in an airtight container for up to 2 days.
