Salad with spinach, chickpeas, tomatoes, cucumbers and artichokes

One of our favorite summer salads is this crisp and flavorful Mediterranean Chickpea Salad.  As we head into gardening season, this salad will come alive with fresh-picked juicy tomatoes, crunchy cucumbers and sweet red peppers! Don’t have your own garden? No problem–just head to your local farmers market, where you’ll find plenty of fresh produce. Add in the star of the dish–the chickpeas–alongside a few Mediterranean staple ingredients and you’ll have a salad that can stand alone as the perfect Meatless Monday dinner or the perfect side dish!  Uncomplicated, simple, light, and deceivingly filling.

  • Chickpeas
  • Cucumber
  • Tomato
  • Red Pepper

  • Kalamata olives
  • Marinated artichoke hearts

  • Red wine vinegar

How to Make the Mediterranean Chickpea Salad

This salad requires two prepping methods: chopping and mixing. It’s so simple even the least culinarily inclined of us can do it!

  • In a large bowl add the cucumber, tomatoes, red pepper, onion, chopped spinach, chickpeas, artichokes and kalamata olives.
  • In a small bowl, add the dressing ingredients: lemon juice, olive oil, garlic, vinegar, oregano, salt and pepper. Whisk until fully combined. 
  • Drizzle the dressing over the salad mix and toss gently.
  • Cover and refrigerate for at least 15 minutes before serving. This allows the flavors to marinate together.  Don’t have time to wait? You can certainly eat this delicious salad right away!

  1. Do you like to plan ahead and make your lunch for the week? This salad keeps very well, making it a great option for meal prepping lunches for the week.
  2. Try serving this dish as an appetizer/dip with some homemade baked pita chips for dipping. 
  3. Craving a sandwich? Stuff your favorite pita pocket with the salad, and you’re good to go!  Lunch is served!

Ingredients
  

Salad

  • 15 ounce can chickpeas (garbanzo beans) rinsed and drained well
  • 1 English cucumber diced
  • 2 tomatoes diced
  • 1 red bell pepper diced
  • 1 sweet onion diced
  • 3 cups fresh baby spinach chopped
  • ¾ cup Kalamata olives pitted and chopped
  • 1 ounce jar marinated artichoke hearts drained

Dressing

  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic minced
  • 1 lemon juiced
  • 1 tsp oregano
  • salt & pepper to taste

Instructions
 

  • Combine chickpeas with the cucumber, tomatoes, pepper, onion, spinach, kalamata olives and artichokes in a large mixing bowl.
  • Add the dressing ingredients to a small bowl and whisk to combine (or shake them together in a small mason jar).
  • Add the dressing to the salad and toss gently until well combined. 
  • Cover and refrigerate for at least 15 to allow the flavors to marinate together. Enjoy!
