Easy to make Grecian Lamb Tacos

Taco Tuesday wouldn’t be complete without another variation on the traditional taco! Tzatziki Sauce

Not familiar with Tzatziki Sauce? It’s a light and fresh sauce that compliments a variety of dishes. A thick Greek yogurt is packed with fresh cucumber, lemon juice, garlic and fresh dill, (yes, we are on Team Dill not Team Mint when it comes to making Tzatziki!)  It’s a super simple and quick dip to make, and you’ll find yourself adding a dollop to grilled meats, fish, roasted vegetables, sandwiches, pita and crackers- you name it. Just about anything goes!  The key to making an especially tasty Tzatziki sauce is to allow it to refrigerate for at least one hour before using. Simple, Easy Instructions on How To Make Grecian Lamb Tacos

Start by heating the olive oil in a large skillet over medium. Add the ground lamb. Break up the meat for the first minute or so it’s cooking, to make sure it’s crumbly. Cook the meat through until it is browned, about 10 minutes. Add the spices and ¼ cup water. Reduce the heat to low and continue to cook for an additional 5 minutes.  While the meat continues to cook, prepare the toppings by shredding the lettuce, chopping the cucumbers, tomatoes, olives and slicing the onions. Get ready to put your Grecian Lamb Tacos together!

Let’s Assemble Some Tacos!

Preheat the oven to 200 degrees and then turn the oven off.  Place a few tortillas on a cookie sheet and place the cookie sheet in the warm oven. Heat the tortillas for a few minutes (this won’t take very long), then remove the cookie sheet and begin filling your tortillas. On each tortilla add a layer of lettuce, lamb, tomato, and cucumber. Top with a spoonful of Tzatziki sauce, followed by a sprinkling of  Kalamata olives, onions and feta cheese. You’re all set for a fabulous easy to prepare dinner! Ingredients
  

  • 1 tbsp. Olive Oil
  • 1 lb. Ground Lamb
  • 1/2 tsp. Paprika
  • 1 tsp. Pepper
  • 1 tsp. Dried Oregano
  • 1 tsp. Dried Basil
  • 1/2 tsp. Cumin
  • 1 tsp Garlic Powder
  • 1/4 cup Water
  • 10 Whole Wheat Tortillas
  • 2 cups Lettuce shredded
  • 2 cups Tomato chopped
  • 2 cups Cucumber chopped
  • 1 cup Kalamata Olives pitted and chopped
  • 1 medium Sweet Onion sliced thin
  • 1 cup Feta Cheese crumbled
  • Tzatziki Sauce

Instructions

  • While the meat continues to cook, prepare the toppings by shredding the lettuce, chopping the cucumbers, tomatoes, olives and slicing the onions.

  • Add a layer of lettuce, lamb, tomato, and cucumber to the each tortilla. Top with a spoonful of Tzatziki sauce, followed by a sprinkling of  Kalamata olives, onions and feta cheese. Enjoy!

Notes

Tzatziki sauce can be made the day before, or at least one hour before serving the tacos.  If you’re looking for an even healthier version of our Grecian Lamb Tacos, use lettuce wraps instead of the tortillas.
