Greek Sweet Potato Fries with oregano and feta cheese

We baked our fries and you still get all of the satisfaction of the traditional fried potatoes version (which we know are a no-no on our heart-healthy journey). Your guests will be so impressed with the flavor and gourmet style of this dish, but it’ll be our little secret how easy it is to prepare.    

Most people love the saltiness that you get from the traditional french fry, but you’ll get just enough of that salty taste from the feta cheese, along with the sweetness of the potato. Extra points for the great nutritional value too.  Loaded with rich beta-carotene, fiber, vitamins A, C B1,2 & 6 and potassium.

How to Make Sweet Potato Greek Fries

Start by preheating the oven to 400 degrees. Peel the sweet potatoes and cut them into long sticks. An optional additional step for a crispy fry it to soak the cut potatoes in a bowl of water. This allows some of the starch to be released which you will see in the water as it turns white. Patch them dry (if soaking) and place in a even single layer on a parchment paper lined baking sheet. Bake for about 15 minutes and flip the fries and cook for another 15 minutes or until they become tender and crispy. Remove the fries from the oven and drizzle with extra virgin olive oil. Then transfer the fires to a serving dish and sprinkle with dried oregano and feta cheese. Then they are ready to serve!

Ingredients
  

  • 2-3 medium size sweet potatoes
  • 3 tbsp olive oil
  • 2 tbsp dried oregano
  • 4 oz feta cheese
  • 2 tsp pepper

Instructions
 

  • Peel and cut sweet potatoes into long sticks.
  • Add potatoes to a large bowl and toss with the olive oil, pepper, and oregano.
  • Line a baking sheet with parchment paper and spread potatoes out in a single layer.
  • Place pan in a preheated 400 degree and bake for 10-15 minutes.
  • Flip once and continue to bake until potatoes become crispy and tender.
  • Remove the pan from the oven and drizzle with olive oil. Place fries on a serving dish and sprinkle with the feta cheese and additional oregano. Serve immediately.

Notes

For a crispier fry soak your sweet potatoes before baking them. Place the cut fries in a large bowl and cover with water. This helps to draw out the starch so the water will turn cloudy. Let them sit for at least 10 minutes and then drain and pat dry before placing on your baking sheet.
