This simple recipe for Carrot Fries really lets the sweet caramelized flavors of the carrot shine. Once baked they have a very similar taste to sweet potato fries! By using carrots it gives the dish a healthier spin than their spud friends with fewer calories coming in at around 84 calories per serving (not counting the dipping sauce). Then there’s the added fact that they are baked in the oven and not fried like traditional fries.

How to Make Carrot Fries

What gives these carrots the feeling of really eating “fries” is using whole carrots and cutting them into thin matchsticks. Using baby carrots wouldn’t give you the right texture. To cut the whole carrots carefully use a knife or a mandolin. Once all of the carrots are cut place them in a whole and get ready to season them! In a small bowl combine olive oil, honey, garlic powder, dried oregano, salt and pepper, and whisk together. Pour the seasoning mixture over the carrots and toss to coat the carrot sticks.

Next, lay the seasoned carrot sticks evenly on a lined baking sheet making sure there is room between the carrots. You can use two baking sheets if needed. Place the carrots in a preheats 425-degree oven and bake for 10 minutes.

Then flip the carrots and bake for another 5-10 minutes. When the carrots are fully cooked remove them from the over and transfer to a serving plate and sprinkle with fresh chopped fill and serve!

Ingredients
  

  • 1 pound carrots washed and peeled
  • 1 tbsp olive oil
  • 1 tsp honey
  • ¼ tsp garlic powder
  • 1 tsp dried oregano
  • salt & pepper to taste
  • 1 tbsp fresh dill chopped
  • Tzatziki Sauce

Instructions
 

  • Preheat to 425 degrees F and line a baking sheet with a silicone mat or parchment paper.
  • Carefully cut carrots into match sticks using a knife or mandolin. Place them in a bowl and set aside.
  • In a small bowl combine olive oil, honey and spices and whisk together. Pour the mixture over the carrots and toss to coat.
  • Lay the carrots out evenly on the baking sheet and make sure to leave room in between. Bake for 10 minutes, flip the carrots and bake for another 5-10 minutes.
  • Remove from the oven and transfer to a serving plate, sprinkle with fresh dill and serve.
