Baked Stuffed Brie

It starts with a wheel of brie cheese baked in a phyllo parcel, then topped with a delicious medley of cranberries, pecans, and walnuts. The creamy brie and sweet cranberry sauce add a wonderful flavor to the layers of flaky, crispy phyllo dough. Besides being tasty, so ooey-gooey, and creamy, the presentation is fantastic! The best part about this baked brie? Your guests will be so impressed with your culinary skills; they’ll think you spent hours in the kitchen.  Only you will know the secret! 

Here’s what you need

Ingredients
  • One round of Brie cheese
  • Fresh cranberries
  • Honey
  • Vanilla
  • Phyllo dough
  • Pecans
  • Walnuts
  • Olive oil

Let’s make baked stuffed brie

  • First, remove the cheese from the packaging and discard any wrappings. Next, allow the cheese to come to room temperature for approximately a half-hour. Please do not remove the rind from the brie as it will help the cheese hold its shape when baking and add a subtle earthy flavor! 
  • If you are using frozen phyllo dough make sure you thaw it in the refrigerator the night before you need to use it. After thawing or using fresh dough, bring the package of phyllo dough to room temperature before opening the box and unrolling the sheets.
Rinse Cranberries
  • Rinse cranberries in a colander and pick out any berries that are damaged or bruised. In a saucepan over low heat, combine the cranberries, honey, vanilla, and water, cook until the berries burst (they will make a popping sound) for about 10- 15 minutes. Then remove them from the heat and place them in a bowl. 

Assembling the Baked Stuffed Brie

  • Remove the phyllo dough from the package and unroll the sheets. Cover the dough with a damp towel to keep it moist. As you remove one sheet, place the towel back on the remaining sheets. Phyllo dough will dry out very quickly. 
  • Lay a sheet of phyllo dough horizontally on a dry surface and brush with olive oil. Place another sheet of dough on top. Brush with olive oil, and continue until you have four sheets of dough. Don’t forget to continue covering the remaining dough with the damp towel. Layer the remaining sheets vertically, making sure to brush with olive oil between each layer. 
  • Place brie in the center of the sheets and top with the chopped walnuts and pecans. Fold sheets of phyllo over the brie. Brush with olive oil, tuck in the sides, and place on the prepared baking sheet.

  • Bake in a 400 F preheated oven between 25-30 minutes or until golden brown. Remove from the oven and spoon the cranberry sauce over the top along with additional chopped nuts. This dish is best served hot to for full ooey-gooeyness! We love scooping it with apple slices, crunchy crostini, and crackers.

  • Place cheese in the center of the phyllo sheets and top with the chopped nuts. Saving a few to add to the brie after it is baked.
  • Fold sheet of phyllo over the cheese. Brush with olive oil and tuck in the sides. Place the brie on the baking sheet covered with parchment paper.
  • Bake in a 400 degree preheated oven for 25-30 minutes until golden brown. Remove from the oven and spoon the cranberry sauce over the top of the brie adding additional chopped nuts.
  • Serve hot with apple slices, crunchy crostini, and crackers. Enjoy!
