Hey everyone, it’s Alexa. I just wanted to share that we are finally getting settled in Atlanta, and are having a great time exploring all the wonderful things this city has to offer. A favorite fall activity we were able to do as a family before leaving Ohio was to go apple picking!  This year we got lucky and had the most beautiful sunny day! We had so much fun, and ate way too many apples!  Even though the grocery stores are flooded with every type of apple this time of year there’s something extra special about picking them right off the trees.  Using those freshly picked apples, we like to make this yummy dish of  Baked Apples with Maple Greek Yogurt.

Craving apple pie but watching your intake of sweets like we are?  Then you are going to love this recipe. It has all the flavors of apple pie but without all the butter and fats. This recipe for Baked Apples is simple, healthy and easy to prepare.  While the apples are baking your kitchen will be filled with all the heavenly scents of fall. There’s just something so yummy about cinnamon and apples baking!

These apples are baked with a delicious blend of chopped pecans, raisins and cinnamon in their centers. All fo the flavors melt together during the baking process which creates a super soft apple with a warm crunchy topping. Then, before serving we topped the baked apples with a maple Greek yogurt. It’s just traditional Greek yogurt and maple syrup, so simple, it really brings home the feeling of fall in this dish.

Baked Apples with Maple Greek Yogurt

Simple, healthy dessert of baked apples with maple Greek yogurt topping.

Ingredients
  

  • 3 Gala apples or any variety you like
  • 3/4 cup chopped pecans
  • 1/2 cup raisins
  • 1 tsp cinnamon
  • 3 tsp pure maple syrup
  • 1 cup Greek yogurt

Instructions
 

  • Preheat oven to 350 degrees.
  • Wash and dry apples.
  • Cut apples in half and scoop out seeds, core and cut a little bowl in the center of each apple. Place apples in a baking dish. (If apple half does not stand flat, cut a thin slice from the bottom of each apple)
  • In a bowl combine chopped pecans, raisins and cinnamon.
  • Add even amounts of the pecan mixture to the center of each apple.
  • Drizzle 2 tsp of the maple syrup over halved apples, and bake until apples are tender, about 30- 35 minutes. Apples are tender when pierced easily with a knife.
  • While apples are baking, add the Greek yogurt to a small bowl along with 1 tsp of maple syrup. Mix thoroughly and place in refrigerator until apples are done baking.
  • Remove apples from oven and cool slightly.
  • Before serving add a dollop of the maple Greek yogurt to the center of each apple and sprinkle with cinnamon.
