Zucchini Squares with a Greek Twist

It’s a pretty safe bet that somewhere along the line you have enjoyed zucchini squares, the classic summer dish. You know, the ones that show up at a backyard bbq or picnic, especially during the height of zucchini season?  You may even get a surprise pan from your neighbors because, “yes,” their garden is just bursting with zucchinis, too!  We’ll admit that we *may* go a little overboard with zucchini growing season, but it’s such a versatile vegetable that we incorporate into so many dishes.  We know you can’t get enough zucchini square recipes so, of course we had to “Greek” it up!  Are you surprised?! This recipe for Zucchini Squares (with a Greek twist) is a snap to prepare and, let’s face it: who can resist any dish that includes feta cheese? 

Ingredient List

  • Zucchini (grated)
  • Bisquick Baking Mix
  • Onion
  • Oregano
  • Dill
  • Pepper
  • Garlic Powder
  • Feta Cheese
  • Extra Virgin Olive Oil
  • Eggs

This recipe includes simple ingredients that we know many of you already have on hand or are readily available at the grocery store. We generally do not use processed foods in our recipes, but we are making an exception in this recipe by using a pre-made baking mix. Our motto is everything in moderation, so don’t feel guilty about it, the healthy zucchini in the mix cancels it out anyway, right?! 

How To Make Zucchini Squares (with a Greek twist)

Ready for the oven

To make the squares, mix together the first seven ingredients.  In a separate bowl, lightly beat the eggs and add them to the dry mix. Add in the crumbled feta cheese, and mix thoroughly. How simple is that?! We certainly weren’t kidding, that’s why we love this recipe so much! Pour the ingredients into the prepared baking dish and spread. Bake for 30 minutes or until set in center and golden brown. Let cool for 5 minutes before cutting into squares. That’s it! You may want to make a double batch, because if your crew is anything like ours, these squares will be gone in no time at all!

Ingredients
  

  • 3 cups zucchini shredded
  • 1 cup Bisquick Baking Mix
  • ½ cup onion chopped
  • 1 tbsp dill fresh
  • ¼ tsp pepper
  • 1/2 tsp garlic powder
  • ¾ cup feta cheese crumbled
  • ¼ cup extra virgin olive oil
  • 4 eggs

Instructions
 

  • Preheat the oven to 350 degrees.
  •  Lightly coat a 9 x 13 baking pan with cooking spray.
  • In a large bowl, whisk together the first seven ingredients.
  •  In a separate small bowl, lightly beat eggs and add them to the dry ingredients.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 30 minutes or until lightly golden brown and the center is set. Allow to cool for 5 minutes before cutting into squares.
