Avocados stuffed with three different fillings

Stuffed Avocado Salad made three ways because they’re all so good we couldn’t make just one! Avocados are a great addition to a heart-healthy lifestyle due to their being loaded with vitamins and healthy fats.  Plus the avocado has more potassium than a banana! Who knew? Stuffing them with ingredients that you love, is a great way to add them to your healthy lifestyle. Notice we aren’t saying “diet” as we believe an overall change in lifestyle eating is the way to go. Finding new ways to incorporate the dishes you love into healthier versions is much more satisfying and therefore you don’t feel restricted.   Getting excited about new recipes and dishes can be fun!

Stuffed Avocados – Super Simple

There are many ways to stuff an avocado, these are just a few of our favorites. It’s a quick and easy lunch idea and perfect for this hot weather we have been experiencing.  So easy to prepare by just gathering a few simple ingredients, quick chopping, mixing and then stuffing. How could something so simple to prepare, packed such a nutritious punch and taste so good too!  Don’t forget all that creaminess of the avocado mixing in with the salad toppings too! Mediterranean Tuna

  • Mediterranean Tuna – Once mixed, this salad is so good, you’ll want to eat it right out of the bowl.  But stuff those avocados for a taste that goes beyond ordinary! Tuna is packed with lean protein, omega 3 fatty acids and is low in cholesterol.  Added with the fiber and healthy nutrition from the chickpeas and you have created a powerhouse lunch. 

Tahini Chicken -Stuffed Avocados

  • Using tahini instead of mayonnaise lightens up the fats as tahini only has  2 grams of saturated fats and 14 grams of polyunsaturated fats found to be beneficial to heart health.  Mixing the tahini with chicken, cucumbers, peppers and red onion and adding a splash of fresh lemon juice completes this tasty and healthy alternative to regular chicken salad.  Try a different twist on this recipe by switching the tahini for our avocado mayonnaise.

Caprese

  • Caprese  – A favorite Italian classic the Caprese Salad made with only three main ingredients, tomatoes, mozzarella and fresh basil makes for a delightful and light summer meal!   Choose a good quality balsamic vinegar and fresh basil, not dried. So simple and fresh!

Stuffed Avocados

Rich and creamy avocados stuffed with three different healthy ingredient mixtures.

Ingredients
  

Mediterranean Tuna

  • 2 cans tuna packed in water drained
  • 1/4 cup red onion chopped
  • 1 lemon
  • 1 sm can chickpeas rinsed and drained
  • 3 tbsp olive oil
  • 1 tsp pepper
  • 1/2 cup kalamata olives pitted and chopped
  • 2 ripe avocados halved and pitted

Tahini Chicken

  • 2 cups cooked chicken cubed
  • 1/2 cup red pepper chopped
  • 1/4 cup red onion chopped
  • 1/2 cup cucumber chopped
  • 2 tbsp tahini
  • 1 tsp pepper
  • 1 lemon
  • 1 tsp red pepper flakes optional
  • 2 avocados halved and pitted

Caprese

  • 1 1/2 cup cherry or grape tomatoes halved
  • 5 oz fresh mozzarella pearls or cubed
  • 3 tbsp fresh basil chopped
  • 1 tsp pepper
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • pinch of salt
  • 2 avocados halved and pitted

Instructions
 

Mediterranean Tuna

  • In a bowl combine the tuna, onion, chickpeas and olives. Add the olive oil, pepper, and the juice of the lemon. Stir gently to mix all ingredients. Spoon the tuna filling into each avocado half. Serve immediately.

Tahini Chicken

  • In a bowl combine chicken, pepper, onion and cucumber. In another small bowl, add tahini, pepper and the juice of the lemon. Mix well and pour on top of chicken mixture. Spoon the chicken filling into each avocado half. Serve immediately. * If using red pepper for a little kick. You can add them to the mixture or sprinkle them on top of the chicken mixture before serving.

Caprese

  • In a bowl combine tomato, mozzarella, basil and pepper. Pour olive oil and vinegar on top and mix gently. Spoon the tomato filling into each avocado half. Serve immediately.
