Whole Roasted Greek Lemon Chicken with red potatoes and green beans

I bet you think roasting a whole chicken is hard, right? Well, we’re here to change your mind and show you how easy it really is to get a juicy, whole roasted chicken right in your own home with our Whole Roasted Greek Lemon Chicken! Sure you can pop by the grocery store and pick up a rotisserie chicken that’s been sitting under heat lamps for who knows how long. Or you can make one yourself, know exactly what’s in it and make your kitchen smell insanely good while cooking! Seriously though, you’ll be counting down the minutes until its ready so you can grab a fork and dive right in! It’s the perfect dish for gathering the family together for Sunday dinner, hosting a dinner party. Plus it’s an all in one pan meal!

Marinating the chicken

The key to getting a juicy tasty chicken is marinating it in lathlemono overnight. Latholemono is a jack of all trades greek marinade that we literally put on everything! To see our full blog post on latholemono click HERE. It’s a DELICIOUS blend of greek extra virgin olive oil, garlic, dried Greek oregano, and lemon. Ok now let’s get down to the details. Add all of the marinade ingredients to a blender and blend on high. Add the chicken to a zip-top bag (or a large bowl) and pour the marinade over the chicken, close the bag and shake the marinade all around the chicken. Place the bag on a plate and put it in the refrigerator overnight.

Preheat the oven and prep the veggies. You could use a glass pan or deep baking dish to cook this recipe but we prefer to use a cookie sheet. The cookie sheet helps everything get nice and crispy on the outside and soft on the inside. Bake the chicken for 90 minutes being sure to give the veggies a stir during cooking so that they don’t stick to the pan.

Take the chicken out of the oven to cool down for a few minutes… cut… and serve. It’s that easy!

This recipe for perfectly juicy whole roasted chicken is marinated in a lemony greek dressing overnight and baked to golden brown with crispy veggies.

  • Marinate the chicken overnight by placing the chicken in a large plastic bag and covering it with freshly made latholemono marinade.
  • Tightly close the bag and place it on a plate and refrigerate overnight.
  • When ready to cook, preheat the oven to 350 degrees F.
  • Take the marinated chicken out of the bag and place it on a baking sheet.
  • Tuck the wings under the breast and tie the legs together cooking twine.
  • Add potatoes and green beans to the baking dish.
  • Sprinkle the chicken and vegetable liberally with dried oregano.
  • Bake for 90 minutes or until the chicken is cooked all the way through. Be sure to stir the vegetables during baking so that they don’t stick to the pan.
  • Remove from the oven and allow to cool for at least 15 minutes before carving.
