This recipe for healthy Grilled Greek Salmon Kebabs is summer grilling at its absolute best!

Thes kebabs are marinated with olive oil, fresh lemon juice and spices and topped with a feta drizzle. The ingredients required are probably already in your cabinet, and what’s better than whipping up a tasty meal without having to buy a boatload of ingredients? A combination of flavors found in lots of Mediterranean recipes. The symphony of flavors evokes the characteristic Mediterranean taste: fresh, herby, citrusy, and bursting with flavor. Adding the extra tang of the feta cheese takes the flavor explosion to the next level. There is a definite correlation with that combination that makes Mediterranean cooking so good–why else would so many recipes rely on this flavoring?!

What Makes this Dish Healthy?

While this recipe would work with any other number of meats or fish, we choose to highlight salmon. Salmon is high in protein, omega 3 fatty acids, and the B vitamins, making it a versatile powerhouse food. Salmon was one of the first foods that we started incorporating into our diet at the beginning of our heart-healthy journey, and it has been a staple ever since. If possible, try to purchase wild-caught salmon, as the calorie and fat content is lower than the farm-raised variety. If wild-caught salmon isn’t available, farm-raised will work just fine with this recipe. Add colorful healthy vegetables to the nutrient-rich salmon, and your heart-healthy diet gets a huge boost. We used peppers and zucchini, but feel free to use your family’s favorite veggies!

This recipe is all about easy prep: while the salmon marinates, you can easily cut your veggies and make the feta drizzle, and you’re good to go!

Start with a nice thick filet of salmon; it will marinate quickly. Thread your salmon and veggies and grill for about 10-12 minutes.  Once on the grill, don’t turn skewers for about the first 3-4 minutes, otherwise the salmon will stick to the grill. Grill the salmon until it is thoroughly cooked. Now it’s time for the best part–remove the skewers from the grill and drizzle with the feta sauce!

What to Serve with Grilled Greek Salmon Kebabs

These kebabs are quite filling since they contain both protein and vegetables. So we like to keep it simple when it comes to what to serve alongside them. Rice goes great with this dish and you could use white, brown or even cauliflower rice or quinoa. If you prefer to limit grains then a Greek Peasant Salad would be the perfect accompaniment.

Ingredients
  

Kebabs

  • 4 tbsp olive oil
  • 1 tbsp dried oregano
  • ½ tsp pepper
  • 1 lemon juiced
  • 2 cloves garlic chopped
  • 1 ½ lb salmon filet cut into 1 inch cubes
  • 1 small zucchini sliced
  • 1 red pepper cut into ½ inch pieces
  • 1 yellow pepper cut into ½ inch pieces
  • 2 lemons sliced thinly

Sauce

  • 3 tbsp olive oil
  • 3 tbsp feta cheese crumbled
  • 1 tsp dried oregano

Instructions
 

  • Prepare wooden skewers by soaking them in water, this prevents sticks from burning while grilling.
  • In a medium-sized bowl combine olive oil, oregano, pepper, juice of one lemon and garlic.
  • Add salmon cubes and toss gently. Set aside in refrigerator to marinate for 30 minutes.
  • Preheat grill and prepare the vegetables while salmon marinades.
  • Using 2 skewers, this helps keep the salmon from flipping while grilling. Thread skewers with salmon and alternate with vegetables.
  • Place skewers on grill and allow to cook for 3-4 minutes before turning.
  • Cook salmon for 5 minutes each side, or until cooked throughout. Salmon will release from grill when cooked.
  • To prepare the sauce mix olive oil, feta cheese and oregano in a small bowl.
  • Remove the kebabds from grill and plate.
  • Drizzle feta sauce over top of the salmon and serve.
