Grilled Greek Salmon Kebabs

Kebabs
- 4 tbsp olive oil
- 1 tbsp dried oregano
- ½ tsp pepper
- 1 lemon juiced
- 2 cloves garlic chopped
- 1 ½ lb salmon filet cut into 1 inch cubes
- 1 small zucchini sliced
- 1 red pepper cut into ½ inch pieces
- 1 yellow pepper cut into ½ inch pieces
- 2 lemons sliced thinly
Sauce
- 3 tbsp olive oil
- 3 tbsp feta cheese crumbled
- 1 tsp dried oregano
Prepare wooden skewers by soaking them in water, this prevents sticks from burning while grilling.
In a medium-sized bowl combine olive oil, oregano, pepper, juice of one lemon and garlic.
Add salmon cubes and toss gently. Set aside in refrigerator to marinate for 30 minutes.
Preheat grill and prepare the vegetables while salmon marinades.
Using 2 skewers, this helps keep the salmon from flipping while grilling. Thread skewers with salmon and alternate with vegetables.
Place skewers on grill and allow to cook for 3-4 minutes before turning.
Cook salmon for 5 minutes each side, or until cooked throughout. Salmon will release from grill when cooked.
To prepare the sauce mix olive oil, feta cheese and oregano in a small bowl.
Remove the kebabds from grill and plate.
Drizzle feta sauce over top of the salmon and serve.
