Chickpea Blondies

These yummy, nutty Chickpea Blondies are grain-free and surprisingly healthy! Yep, we said Chickpeas, also known as garbanzo beans, those heart-healthy, plant-based protein-packed beans we love to toss in salads and make dips with is now the main ingredient in blondies!  Plus Chickpea Blondies are so quick to make, just throw everything in a blender and in no time you have a satisfying dessert, breakfast or after school snack!

We used canned organic chickpeas but you could also use dried beans. The day before you want to make the blondies place the dried beans in a bowl and cover with water and the next day they will have plumped up and be ready to use!

Making the Chickpea Blondies

To make the blondies add all of the ingredients except the walnuts and chocolate chips to a blender. Blend until a smooth batter is formed. You’ll need to scrape down the sides a few times to make sure everything gets incorporated. Next, gently fold in the walnuts and chocolate chips. Pour the batter into a parchment-lined 8×8″ baking dish and spread evenly with a spatula. Top with additional chocolate chips, if you’d like. And let’s be real more chocolate chips is always a good idea! Then pop in the oven for 20-30 minutes. Stick a toothpick into the center of the blondies and it comes out clean with no batter stuck to it.

Ingredients
  

  • 1 15 oz can chickpeas (drained & rinsed)
  • ¼ cup nut butter of choice
  • ½ cup fine almond flour
  • ½ cup unsweetened almond milk
  • 3 tbsp honey or maple syrup for vegan
  • 2 tsp vanilla extract
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • 1 tsp cinnamon
  • cup chocolate chip plus more for topping
  • cup chopped walnuts
  • pinch of salt

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Add all ingredients except for chocolate chips and walnuts to a blender.
  • Blend on high until smooth, stopping when needed to scrape down the sides.
  • Next fold in the chocolate chips and walnuts.
  • Line an 8×8” baking dish with parchment paper.
  • Pour the batter into the lined baking dish and spread evenly with a spatula. Top with more chocolate chips if desired pressing them into the batter slightly.
  • Bake for 20-30 minutes depending on your oven.
  • To check for doneness while cooking, insert a toothpick into the blondies and if no batter appears on the toothpick when you pull it out, they are done!
  • Place on a wire rack and allow to cool before cutting. Store in an airtight container in the refrigerator.
