Easy Short Ribs

Ingredients
  

  • 8 short ribs bone-in
  • 3 tbsp olive oil
  • 1 onion diced
  • 3 ribs celery diced
  • 3 medium carrots diced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 cups low sodium beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 2 cups hilopites
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large Dutch oven or oven-safe pot, heat olive oil over medium heat. Season the short ribs with salt and pepper, then brown them on all sides in the pot. Remove and set aside.
  • In the same pot, sauté onions, celery, and carrots until softened.
  • Add minced garlic and cook for an additional minute. Stir in tomato paste and cook for 2 minutes.
  • Pour in red wine and beef broth, scraping the bottom of the pot to release any flavorful bits. Return the browned short ribs to the pot, add bay leaves, and bring the liquid to a simmer.
  • Cover with a lid and transfer it to the preheated oven. Braise for 2 to 2.5 hours or until the short ribs are tender; they should be nearly falling apart.
  • In the last 10 minutes of cooking, add in the hilopites and cook until soft, stirring carefully to make sure they don't stick to the bottom.
  • Remove the pot from the oven and allow it to rest for 10 minutes. Serve up this comforting dish and enjoy every delicious bite.

Notes

If you can't find hilopites, no worries! Substitute with your favorite pasta like pappardelle, egg noodles, or even a small-shaped pasta. The key is to choose a pasta that complements the rich flavors of the short ribs and absorbs the delicious sauce well.
