Easy Sausage Sheet Pan Dinner

Ingredients
  

  • 1 red onion peeled, cut into quarters
  • 4 cloves garlic whole
  • 1 sweet potato peeled and diced
  • 1 medium medium zucchini sliced
  • ½ orange pepper seeded and cut into thin strips
  • ½ red pepper seeded and cut into thin strips
  • ½ yellow pepper seeded and cut into thin strips
  • 8 ounce pkg mushrooms sliced
  • 2 cups broccoli florets
  • 16 ounces chicken sausage cut into coins (see notes)
  • 16 ounces lean turkey sausage cut into coins (see notes)

Marinade

  • 3 tbsp Dijon mustard
  • ¼ cup red wine vinegar
  • ¼ cup honey
  • 1/4 cup olive oil
  • freshly ground pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C). Prepare a baking sheet by adding parchment paper.
  • In a large bowl, combine the quartered red onion, whole garlic cloves, diced sweet potato, sliced zucchini, thin strips of red, orange, and yellow peppers, halved mushrooms, and broccoli florets.
  • In a small bowl, whisk together the Dijon mustard, wine vinegar, honey, olive oil, and freshly ground pepper to create the marinade.
  • Pour the marinade over the vegetables in the large bowl. Mix well, ensuring that all the vegetables are evenly coated with the marinade.
  • Transfer the marinated vegetables and sausages onto a large sheet pan, spreading them out in a single layer
  • Roast in the preheated oven for 25-30 minutes or until the vegetables are tender and the sausages are cooked through, turning the sausages and stirring the vegetables halfway through the cooking time
  • Once cooked, remove from the oven and let it rest for a few minutes. Serve the sheet pan sausage dinner hot, and enjoy your delicious and easy one-pan meal!

Notes

Sausages - We used a mix of turkey and chicken spinach sausages, but choose your favorite for this recipe. If you like a bit more heat, go for a spicy sausage—it pairs well with the sweet honey marinade.
