- 1 red onion peeled, cut into quarters
- 4 cloves garlic whole
- 1 sweet potato peeled and diced
- 1 medium medium zucchini sliced
- ½ orange pepper seeded and cut into thin strips
- ½ red pepper seeded and cut into thin strips
- ½ yellow pepper seeded and cut into thin strips
- 8 ounce pkg mushrooms sliced
- 2 cups broccoli florets
- 16 ounces chicken sausage cut into coins (see notes)
- 16 ounces lean turkey sausage cut into coins (see notes)
Marinade
- 3 tbsp Dijon mustard
- ¼ cup red wine vinegar
- ¼ cup honey
- 1/4 cup olive oil
- freshly ground pepper to taste
Preheat the oven to 400°F (200°C). Prepare a baking sheet by adding parchment paper.
In a large bowl, combine the quartered red onion, whole garlic cloves, diced sweet potato, sliced zucchini, thin strips of red, orange, and yellow peppers, halved mushrooms, and broccoli florets.
In a small bowl, whisk together the Dijon mustard, wine vinegar, honey, olive oil, and freshly ground pepper to create the marinade.
Pour the marinade over the vegetables in the large bowl. Mix well, ensuring that all the vegetables are evenly coated with the marinade.
Transfer the marinated vegetables and sausages onto a large sheet pan, spreading them out in a single layer
Roast in the preheated oven for 25-30 minutes or until the vegetables are tender and the sausages are cooked through, turning the sausages and stirring the vegetables halfway through the cooking time
Once cooked, remove from the oven and let it rest for a few minutes. Serve the sheet pan sausage dinner hot, and enjoy your delicious and easy one-pan meal!
