Ingredients
  

  • 1 red, yellow or orange pepper chopped into 1 inch pieces
  • 1 medium zucchini cut into thin ribbons (using a mandolin or sharp knife)
  • 10-12 cherry or grape tomatoes whole
  • 2 -7 ounce pkg halloumi cheese cut into 1 inch pieces
  • ½ red onion sliced
  • 1 lemon juiced
  • ¼ cup olive oil
  • 2 tsp dried oregano
  • 3 tbsp fresh basil chopped
  • salt and pepper to taste

Instructions
 

  • Preheat your grill to medium-high heat. If you're using wooden skewers, remember to soak them in water for 30 minutes prior to grilling to prevent them from burning or catching fire during the cooking process.
  • Cut the halloumi cheese into bite-sized cubes. Ensure that you do not cut the pieces too small, as the cheese may break.
  • Chop the pepper into one-inch pieces. Cut the zucchini into thin ribbons, and slice the red onion.
  • In a small bowl, whisk together the lemon juice, olive oil, dried oregano, basil, salt, and pepper to create a marinade.
  • Place the halloumi cheese, chopped pepper, zucchini ribbons, cherry tomatoes, and red onion slices in a large bowl. Pour the marinade over the ingredients and gently toss to ensure they are well coated. Let the mixture marinate for about 10-15 minutes.
  • Thread the marinated cheese and vegetables onto skewers, alternating between different ingredients to create colorful and flavorful skewers.
  • Place the skewers on the preheated grill and cook for about 3-4 minutes per side, or until the cheese is slightly charred and the vegetables are crisp tender. Remove them from the grill and transfer them to a serving plate.
