Ingredients
  

  • 1 pint cherry tomatoes halved
  • 1 English cucumber diced
  • 3 avocados diced
  • ½ cup red onion thinly sliced
  • ½ cup feta cheese crumbled
  • 3 tbsp olive oil
  • 1 lemon juiced
  • ½ cup Greek yogurt
  • 2 garlic cloves (use only one if you prefer a milder taste)
  • 1 tsp dried dill

Instructions
 

  • In a large bowl, combine the tomatoes, cucumber, onion and avocado.
  • To make the dressing, simply combine the Greek yogurt, feta cheese, olive oil, lemon juice, garlic, and dill in a blender or food processor. Pulse the mixture until it's smooth and creamy.
  • Drizzle the dressing over the top of the salad and use tongs or a large spoon to gently toss everything together until the dressing is evenly distributed. Be careful not to overdress the salad, as a little goes a long way with this rich and flavorful dressing. Serve immediately and enjoy!

Notes

  • This salad is best served immediately after assembling, as the avocado will begin to brown after a few hours.
  • You will most likely end up with leftover dressing after making the salad, but don't worry! Simply store the extra dressing in an airtight container and refrigerate it for later. This creamy feta dressing is so versatile that it can also be used as a tasty dip for grilled meats, vegetables, roasted vegetables or as a spread on sandwich wraps! So, don't let any of it go to waste!
