Greek Gigantes (Plaki)

Greek Gigantes (Plaki) is a dish of creamy, buttery beans cooked in a delicious tomato sauce seasoned with herbs and spices! Serve as a main dish, side, or as an appetizer. The perfect vegan or Meatless Monday meal!

Ingredients
  

  • 1 package dried butter beans (500g)
  • 1 white onion diced
  • 3 celery stalks diced
  • 15 ounce can diced tomato
  • 2 tbsp tomato paste
  • olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley chopped
  • salt & pepper to taste

Instructions
 

  • To prepare the gigantes begin by adding the beans to a large bowl and soaking them overnight covered with plenty of water.
  • The next day, drain the water from the beans and add the beans to a stock pot, fill with fresh water, cover with the lid, and bring to a boil. While the beans are boiling, do not go too far from the stove. The beans tend to become foamy while cooking and you must skim the foam off and discard. Simmer the beans for 45 minutes to an hour.
  • Drain the beans reserving the liquid.
  • Add the beans to a baking dish and add in diced tomatoes, onion, celery, garlic and spices.
  • In a small bowl mix together 2 cups of the reserved liquid with the tomato paste and olive oil. Pour the liquid over the beans and stir carefully.  If the beans are not covered with liquid you can add more of the reserved liquid.
  • Cover with a lid (or aluminum foil) and place in a 350 degree preheated oven. Cook for 1 hour, checking at 30 minutes to see if more liquid is needed. After 1 hour remove the lid and continue cooking for another 30 minutes.  Remove the baking dish from the oven and let it cool slightly
  • Top with fresh parsley and serve as a main dish , side or appetizer. Enjoy!
