2 cups cherry tomatoes 4 tbsp olive oil divided 1 8 ounce block feta cheese 16 ounces pasta of choice 1 pkg fresh spinach 1 tbsp dried orgeano 1 tbsp dried parsley 1 tsp garlic powder ¼ tsp ground pepper
Preheat the oven to 375 degrees. Add the cherry tomatoes to a 13x9 baking dish and drizzle with 2 tablespoons of olive oil.
Push tomatoes to the side and place the block of feta cheese in the center. Drizzle with remaining olive oil and sprinkle with the seasonings.
Bake for 30-35 minutes
Meanwhile, bring a large pot of water to a boil. Cook pasta until al dente.
Add the spinach to the pasta pot & stir until wilted. Drain pasta & spinach.
Remove the baking dish from the oven & mash the feta & stir together with the tomatoes.
Add the pasta and spinach to the baking dish and stir well to combine. Serve immediately.
