Grilled Eggplant and Pear Salad
The perfect starter dish to any meal as it is light and the combination of sweet sautéed pears with savory feta cheese tastes incredible!

- 4 eggplants peeled and sliced into rounds
- 4 tbsp. extra virgin olive oil
- 3 pears peeled, cored and sliced 1/4 inch
- 1 tbsp. water
- ½ cup walnuts chopped
- ½ cup feta cheese crumbled
- ¼ cup olive oil
- 2 tbsp. balsamic vinegar
- 1½ tbsp. honey
- 1 garlic clove minced
- pepper dash or to taste
Preheat the grill to medium
Brush the eggplant slices with 2 tablespoons of the olive oil on both sides.
Grill the eggplant over medium heat until lightly browned and tender, about 4-5 minutes per side.
In a large non-stick skillet over medium heat, add 2 tablespoon olive oil and water.
Add the pear slices and cook until they begin to soften, about 6-8 minutes.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, pepper and garlic.
Arrange the grilled eggplant slices on a platter.
Add the sautéed pears over the eggplant.
Scatter the chopped walnuts and feta cheese over the top. Drizzle the dressing over the entire dish and enjoy!
