Grilled Eggplant and Pear Salad

The perfect starter dish to any meal as it is light and the combination of sweet sautéed pears with savory feta cheese tastes incredible!

Ingredients
  

  • 4 eggplants peeled and sliced into rounds
  • 4 tbsp. extra virgin olive oil
  • 3 pears peeled, cored and sliced 1/4 inch
  • 1 tbsp. water
  • ½ cup walnuts chopped
  • ½ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tbsp. balsamic vinegar
  • tbsp. honey
  • 1 garlic clove minced
  • pepper dash or to taste

Instructions
 

  • Preheat the grill to medium
  • Brush the eggplant slices with 2 tablespoons of the olive oil on both sides.
  • Grill the eggplant over medium heat until lightly browned and tender, about 4-5 minutes per side.
  • In a large non-stick skillet over medium heat, add 2 tablespoon olive oil and water.
  • Add the pear slices and cook until they begin to soften, about 6-8 minutes.
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, pepper and garlic.
  • Arrange the grilled eggplant slices on a platter.
  • Add the sautéed pears over the eggplant.
  • Scatter the chopped walnuts and feta cheese over the top. Drizzle the dressing over the entire dish and enjoy!
