Cucumber Mint Lemonade
This refreshing, hydrating summer drink puts a twist on traditional lemonade. Made with only fresh ingredients and naturally sweetened.

- ¾ cup cucumber juice
- ¾ cup lemon juice
- ½ cup pure honey
- ½ cup filtered water
- 2 sprigs mint leaves (or more)
Peel the cucumber and add to a blender with ¼ cup water (if there are large seeds, you can remove the seeds). Blend on high until a juice is formed.
Place a mesh strainer over a bowl and pour the cucumber mixture into the strainer. Use the spoon to gently press down to release all of the juice. Juice lemons to create ¾ cup of juice (we used 4½ lemons)
Heat a small pot over medium heat and add in the honey and ½ cup of water. Stir until it comes to a soft boil and remove from the heat to cool.
In a large pitcher assemble the lemonade by adding in the cucumber juice, lemon juice and honey syrup. Give that a stir and fill the rest of the pitcher with filtered water. Serve immediately over ice or cool in the refrigerator until ready to serve.
