Salad
- 6 cups seedless watermelon cubed
- 1 small red onion thinly sliced
- 1 cucumber peeled & sliced thin
- ¾ cup feta cheese crumbled
- ½ cup Kalamata olives pitted & chopped
- ¼ cup fresh basil chopped
- ¼ cup fresh mint chopped
Dressing
- ¼ cup olive oil
- 3 tbsp balsamic vinegar
- pepper to taste
In a salad bowl or on a large platter, add the cubed watermelon, red onion, and cucumber.
Top with the crumbled feta cheese and olives.
In a small bowl or glass jar, whisk together the olive oil, balsamic vinegar, and pepper.
Drizzle the dressing over the salad. Sprinkle the mint and basil on top and serve immediately.
