Greek Watermelon Salad with Feta, Mint & Basil

This classic Greek watermelon salad combines sweet watermelon with tangy, salty feta!  The perfect, easy to make, refreshing summer salad.

Ingredients
  

Salad

  • 6 cups seedless watermelon cubed
  • 1 small red onion thinly sliced
  • 1 cucumber peeled & sliced thin
  • ¾ cup feta cheese crumbled
  • ½ cup Kalamata olives pitted & chopped
  • ¼ cup fresh basil chopped
  • ¼ cup fresh mint chopped

Dressing

  • ¼ cup olive oil
  • 3 tbsp balsamic vinegar
  • pepper to taste

Instructions
 

  • In a salad bowl or on a large platter, add the cubed watermelon, red onion, and cucumber.
  • Top with the crumbled feta cheese and olives.
  • In a small bowl or glass jar, whisk together the olive oil, balsamic vinegar, and pepper.
  • Drizzle the dressing over the salad. Sprinkle the mint and basil on top and serve immediately.
