Traditional Greek Peasant Salad - Horiatiki Salad
Traditional Greek salad bursting with flavor and vibrant colors!

- 1 cucumber
- 1 medium red onion
- 4 tomatoes
- 1 green pepper
- 2 tsp dried Greek oregano
- 1/4 cup extra-virgin olive oil
- 1 cup kalamata olives
- splash red wine vinegar optional
- 6 ounce block of feta cheese or more to your taste
- 2 tbsp capers (optional mostly served in the salads on the Greek Islands)
Prep all of the vegetables by thoroughly washing them first.
Peel and slice the cucumber into ¼” rounds, cut the onion into thin slices and slice the green pepper into rings.
Add to a large bowl and cut the tomatoes into small wedges over the bowl to catch all of the juices.
Add in the kalamata olives and sprinkle with oregano.
Then pour olive oil and a splash of vinegar (if using) over the salad and toss gently.
Just before serving place a block of feta cheese on top of the salad.
Top feta block with capers and additional oregano.
Serve with a crusty whole-wheat bread for soaking up all the wonderful juices.
