In a food processor add 1 1/2 cups oats, peanut butter, pecans, spices, vanilla extract, maple syrup, and pumpkin puree.
Pulse until thoroughly mixed.
Place pumpkin mixture in a bowl and stir in the rest of the oats and chocolate chips.
Roll dough into small balls and place on a baking sheet. Place the baking sheet in the refrigerator for 1 hour to allow pumpkin balls to chill. Pumpkin Balls are now ready to enjoy!
Pumpkin balls can be stored in the refrigerator in a sealed container for up to 1 week, or freeze them for a fast grab and go breakfast or snack.
