Fig & Pistachio Blissful bites
These no-bake Fig & Pistachio Blissful Bites are quick an easy to make and great for mornings on the go, an afternoon snack or dessert. They are vegetarian and dairy-free!

- 5 fresh figs
- ½ cup pistachios
- 1 tbsp honey (use maple syrup or agave for Vegan)
- ¼ cup walnuts
- ¼ cup almond butter (or nut butter of choice)
- 1 tbsp ground flax
- 1 tbsp chia seeds
- 1 cup oats
- 2 tbsp vegan dark chocolate
Chop figs and add to a food processor with 1 Tbsp pistachios, honey, walnuts, almond butter, flax and chia seeds.
Process until all ingredients are incorporated, pausing to scrape down the sides.
Transfer to a bowl and fold in oats, cover and place in the refrigerator for at least ½ an hour. Chop up the remaining pistachios.
To form the balls scoop about 1 tablespoon of the mixture and with wet hands roll into a ball, then roll in the chopped pistachios.
Place on a parchment-lined plate. Repeat until all of the mixture has been used. Place back in the refrigerator to firm up.
The mixture will be wet but don’t worry the balls will harder in once they are cooled. I let mine sit overnight.
In a microwave-safe bowl add chocolate and cook for 30 seconds at a time until all of the chunks have melted.
Put a little of the melted chocolate on a spoon or fork then drizzle the top of each ball.
Place back into the refrigerator for at least 10 minutes for the chocolate to set up. Then enjoy!
