Ingredients
  

  • 1 cup dried yellow split peas
  • ½ cup red onion chopped
  • 4 cloves garlic chopped
  • 2 scallions chopped
  • pinch of salt
  • ¼ cup extra-virgin olive oil
  • paprika

Instructions
 

  • Add split peas to a saucepan filled with 2 ½ cups water.
  • Bring to a boil, and skim any foam that starts to appear.
  • Add the red onion, garlic and scallions and return to a boil.
  • Reduce heat to simmer and continue to cook until peas are tender.
  • Remove pan from heat, and add the olive oil and pinch of salt.
  • Using an immersion blender, puree the mixture until smooth and creamy.
  • Allow to cool slightly as Fava will continue to thicken.
  • Place Fava in a serving bowl and top with additional slices of red onion, a splash of olive oil and a sprinkling of paprika. Serve warm and enjoy!

Notes

Fava can be stored in the refrigerator for up to one week. To serve just reheat it on the stove top with a splash of olive oil to help thin it out.
