Soak dates in a small bowl filled with warm water for 5 minutes.
While dates are soaking prepare the rest of the ingredients. In a medium size bowl, combine flax, chia seeds, cranberries, pistachios, 1 cup of rolled oats and chocolate chips.
Remove pits from soaked dates and add them to a food processor.
Add in ½ cup of rolled oats, pulse until a soft paste forms.
Add date paste to the cranberry mixture, along with the honey.
With a wooden spoon mix all ingredients thoroughly.
Cover the bowl with plastic wrap and place bowl in refrigerator for 30 minutes. Cooling the mixture makes it easier to form the balls.
After 30 minutes, remove bowl from refrigerator and using a teaspoonful of the mixture, shape the mixture into balls.
Place Cranberry Pistachio Bites in the refrigerator in an airtight container for up to 5 days or store in the freezer.
