Cranberry Pistachio Bites

Ingredients
  

  • 1 cup Medjool Dates
  • ¼ cup raw honey
  • 1 tbsp ground flax
  • ½ tsp chia seeds
  • 1 cup dried cranberries
  • ½ cup shelled pistachios unsalted
  • 1 ½ cup rolled oats
  • ¼ cup mini chocolate chips
  • ¼ cup shredded coconut unsweetened

Instructions
 

  • Soak dates in a small bowl filled with warm water for 5 minutes.
  • While dates are soaking prepare the rest of the ingredients. In a medium size bowl, combine flax, chia seeds, cranberries, pistachios, 1 cup of rolled oats and chocolate chips.
  • Remove pits from soaked dates and add them to a food processor.
  • Add in ½ cup of rolled oats, pulse until a soft paste forms.
  • Add date paste to the cranberry mixture, along with the honey.
  • With a wooden spoon mix all ingredients thoroughly.
  • Cover the bowl with plastic wrap and place bowl in refrigerator for 30 minutes. Cooling the mixture makes it easier to form the balls.
  • After 30 minutes, remove bowl from refrigerator and using a teaspoonful of the mixture, shape the mixture into balls.
  • Place Cranberry Pistachio Bites in the refrigerator in an airtight container for up to 5 days or store in the freezer.
