In the midst of the holidays, it’s not unusual for snacking to get the best of us. But if it’s healthy snacking it doesn’t count, right? Today’s recipe, Pomegranate Feta Salsa, is a favorite.  It is a perfect addition to any holiday buffet, and not just because it’s delicious–it also adds some much-needed color to your spread.

We’ve put our own twist on classic salsa by making our own Greek-style salsa and adding (yep, you guessed it!) some crumbled feta and olives. Even though the Pomegranate Feta Salsa is full of rich flavor, it’s not full of calories, which means you can guiltlessly snack to your heart’s content. The salsa is full of antioxidants, vitamin c, calcium, and fiber, just to name a few things.  All in all, it’s a great way to incorporate a light, but satisfying, heart-healthy dish to your holiday menu.

As an added bonus, we’re also including some instructions on how to whip up some homemade baked pita chips. Toss the store-bought bags aside in favor of an easy recipe that doesn’t contain any of the added salts or calories!

Pomegranate Feta Salsa

Healthy, low calorie, Greek-inspired salsa that's bright and bursting with flavor!

Ingredients
  

Salsa

  • 1 whole pomegranate (seeded)
  • 1 small red onion (diced)
  • ¼ cup chopped cilantro
  • ¼ cup crumbled feta cheese
  • ¼ cup pitted kalamata olives (diced)
  • 2 tbsp lemon juice

Pita Chips

  • 1 pkg thin pita bread
  • olive oil cooking spray
  • seasonings of choice

Instructions
 

Salsa

  • In a medium bowl, toss together the pomegranate, onion and cilantro.
  • Mix in the feta cheese and kalamata olives.
  • Add the lemon juice and mix to incorporate all the ingredients.
  • Cover, and chill in the refrigerator for at least two hours before serving. Serve with homemade pita chips.

Pita Chips

  • Preheat oven to 350 degrees.
  • Cut each pita into wedges.
  • Arrange pita chips on a baking sheet sprayed with cooking spray. Lightly spray chips with the olive oil cooking spray.
  • Sprinkle chips with the seasoning of your choice. Some ideas are onion powder, garlic powder,cumin, pepper, and chilli powder. Bake until crisp, about 10 – 15 minutes.
