December seems like the perfect month to introduce our recipe for Mediterranean Spiced Nuts. These are a simple and easy snack to prepare–and who doesn’t like simple, especially this time of year?! And let’s be really honest here–who doesn’t feel just a bit overwhelmed during the holidays?!   With all the decorating, shopping, school festivities, family gatherings and neighborhood parties (to name just a few, whew!). . . we’re tired just thinking about it! An effortless recipe served on a cheese board or as part of an appetizer spread seems to be just the ticket to bring a little simplicity to your life.  It’s an outrageously quick and tasty recipe that’s done in just an hour. You can make an extra batch to give away as the perfect hostess gift, too! Who doesn’t love a cute little gift of food? Fill a small cellophane bag with nuts, attach a recipe tag, and secure the bag to a bottle of wine with some festive holiday ribbon.  Perfect gift! Or just whip up an extra batch for yourself, because these little guys tend to disappear FAST! (Not mentioning any names, fam!)

Mediterranean Spiced Nuts- Easy as 1, 2, 3

We chose to use a combination of walnuts and almonds for this batch, but you can use any combination of nuts you enjoy. There are no fast rules here, so tailor to your own tastes!

You’ll want to begin by preheating the oven to 325 degrees.   Add the egg white to a large bowl and whisk until frothy and light.  You can use a stick blender or hand whisk–it’s not necessary to drag out your stand mixer.  The egg white will help bind the seasonings to the nuts. And trust us, you’ll want all those wonderful savory flavors sticking to the nuts, they’re so yummy!  Pour nuts into the egg mixture and stir until evenly coated. In a small bowl, combine salt, cumin, oregano, garlic powder, pepper, paprika and allspice. Add the spice mix to the nuts and stir again until nuts are evenly coated. You’ll be able to see all those wonderful fragrant spices clinging to the nuts.

Spread the nuts in an even layer on a lightly oiled baking sheet.

Easy so far, right?! Bake for 40 minutes, stirring occasionally until nuts look dry and crisp.  Remove from oven and allow to cool. Nuts will continue to dry as they cool. Before storing make sure nuts have cooled (and dried!) completely.  Keep the nuts at room temperature in an airtight container for up to two weeks.  But we guarantee, these Mediterranean Spiced Nuts won’t last that long!

Ingredients
  

  • 1 1/2 lb pound unsalted mixed nuts
  • 1 egg white
  • 1/2 tsp salt
  • 1/2 tsp cumin

  • 1/4 tsp allspice
