Intimidated by the thought of coring the pineapple? Then just bite the bullet and purchase a pineapple corer. With a pineapple corer, you don’t need to worry about peeling away the skin, and the pineapple will be cored in minutes! Simply slice off the top of the pineapple, insert the corer, and twist. Pull up on the corer and voilà! Instant pineapple slices. If you already have too many kitchen tools and don’t want to buy a corer, you can also do this manually. Just set the pineapple upright on a cutting board and slice strips of the outer “shell” by placing a knife about 1/4 inch inside the edge of the fruit. Repeating until all skin has been removed. If notches still appear on the fruit, use a peeler to dig them out. Slice the pineapple into rings.

Once you have your pineapple rings, brush the slices lightly with olive oil, place on the grill, and grill for 3-4 minutes on each side, or until heated thoroughly and grill marks appear. Remove from grill and top with a scoop of the blueberry frozen yogurt.

Ingredients
  

  • 1 cup greek yogurt
  • 3 cups frozen blueberries
  • 2-3 tbsp honey
  • 1 pineapple cored and sliced
  • olive oil

Instructions
 

  • Using a food processor, add the yogurt, blueberries and honey to the bowl. For a less sweet yogurt, use only 2 tablespoons of honey.
  • Process the mixture until it becomes creamy. Scraping down sides of bowl to make sure there are no lumps. This usually takes about 3-5 minutes.
  • For a softer frozen yogurt, serve it immediately or for a harder version add yogurt to an airtight container and freeze until ready to use. When stored properly in the freezer, yogurt will keep for one month.
  • Preheat the grill to medium.
  • Brush both sides of pineapple slices lightly with olive oil, and place on grill.
  • Grill for 3-4 minutes each side, or until heated thoroughly and grill marks appear.
  • Remove from grill and place on serving plate. Top each slice with a scoop of frozen blueberry yogurt. Serve immediately.

Notes

To make this recipe vegan sub maple syrup for the honey and use a dairy-free yogurt.
