Creamy Whipped Feta with Roasted Tomatoes

Instead of using a block of plain feta cheese, add a bowl of this delicious creamy tangy dip to your mezze platter and watch it transform from ordinary to outstanding! With a hint of garlic, lemon, and herbs, this creamy dip is so delicious and smooth.  While this dip is wonderful on its own, adding roasted tomatoes makes it even better!  

Key Ingredients For Creamy Whipped Feta with Roasted Tomatoes

Because it always turns out so incredibly smooth and creamy, it is one of the simplest and tastiest dips to make. It’s all about simple summer cooking, right?  Here are the ingredients we used:

  • Feta Cheese – We suggest using a block of brine-cured feta cheese for this dish. Compared to the creamy block of cheese, the feta you buy in crumbles doesn’t appear to whip as well. 
  • Tomatoes – The best tomatoes to use are cherry or grape tomatoes because of their ideal size. 
  • Olive oil –  Extra virgin olive oil is the recommended type of oil.
  • Herbs-  It’s impossible to top the flavor of fresh dill and oregano in this dip. However, dried herbs will work if fresh herbs are not available. 
  • Greek Yogurt –  For this recipe, plain whole-milk Greek yogurt is essential. Greek yogurt has a thicker texture than regular yogurt, which helps make this dip creamier.
  • Lemon – Naturally, the only type of lemon we advise using is fresh. Freshly squeezed lemon juice has a zestiness that is unmatched.
  • Naan Bread – We used store-bought naan bread from our local Mediterranean shop, but most grocery stores have it. Prior to grilling, we topped the bread with a sprinkling of Everything Bagel seasoning. When digging into that creamy bowl of delicious feta, this adds another depth! Of course, adding the seasoning is completely optional. 

4 Simple Steps

  1. Preheat the oven to 400℉.  Place the tomatoes in a small pan and drizzle with olive oil and season with salt and pepper.  Toss and add a couple of sprigs of fresh oregano and roast for 25 to 30 minutes or until tomatoes are soft and ready to burst. Remove from the oven and allow to cool slightly before adding them to the dip.
  2. While the tomatoes are roasting, add the feta cheese, yogurt, garlic, dill, and lemon juice to a food processor. Pulse and then blend until smooth. Scraping down the sides of the bowl if necessary. Transfer the dip to a bowl and place the bowl in the refrigerator. This will help the dip become firmer.
  3. Preheat your grill on low.  Brush both sides of the bread with olive oil and sprinkle one side with everything bagel seasoning.  Place bread on the grill and grill until the bottom side is light golden brown. Flip with a pair of tongs and cook until the second side is browned. Remove bread from the grill and cut it into wedges.
  4. Remove the dip from the refrigerator and top it with the roasted tomatoes and a drizzle of the delicious aromatic olive oil from the pan.  Serve the dip with the warm bread and enjoy!

Ingredients
  

  • 8 ounce feta cheese
  • 4 ounce Greek yogurt
  • 1 clove garlic minced
  • 2 tbsp fresh dill chopped
  • 1 lemon juiced
  • 1 container cherry or grape tomatoes
  • 2 tbsp olive oil
  • 2 sprigs oregano
  • salt and pepper to taste
  • 3 naan flatbreads
  • 3 tbsp Everything Bagel Seasoning

Instructions
