Got a craving for chicken wings? Our recipe for Baked Buffalo Cauliflower hits the spot! Its a much healthier dish than what you’d get at a sports bar, fried wings dowsed in a buttery sauce. We baked the cauliflower with just a drizzle of olive oil and spices and then lighted tossed in a buffalo and honey house. Instead of a thick blue cheese dressing, we topped our “wings” with feta cheese and used a Greek yogurt-based tzatziki sauce.

WHY CAULIFLOWER?

Besides the florets having a similar shape to a chicken wing, the taste doesn’t overpower the buffalo sauce. It’s a low-calorie vegetable that contains fiber, vitamins (C, K & B6) and minerals. Cauliflower is also a good source of antioxidants which helps reduce inflammation.

HOMEMADE TZATZIKI SAUCE

  • 3/4 cup grated English cucumber squeezed
  • 1 cup greek yogurt
  • 1 tbsp dill
  • 2 cloves garlic minced
  • pinch of salt and pepper
  • 1/2 lemon juiced

Baked Buffalo Cauliflower

These baked cauliflower bites will be sure to satisfy any buffalo wing cravings! They are tossed in a lighter buffalo sauce and then topped with feta cheese. Pair with a side of tzatziki sauce for dipping.

Ingredients
  

  • 1 head cauliflower
  • 1 tsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ½ tsp pepper
  • ½ cup hot sauce
  • 1 tbsp honey
  • ¼ cup feta cheese

Instructions
 

  • Preheat the oven to 375 degrees F.
  • Wash and cut the cauliflower into bite-sized pieces.
  • Place the florets on a baking sheet and drizzle with olive oil, ¼ tsp garlic, pepper, and salt.
  • Bake for 20-25 minutes flipping the cauliflower about halfway through.
  • Meanwhile make the sauce by whisking together the buffalo sauce with honey, ¼ tsp garlic, and pepper.
  • Once the cauliflower has cooked remove from the oven and place into a bowl and toss with buffalo sauce. Top with crumbled feta cheese and serve.

Notes

Pair with our homemade Tzatziki Sauce and for a vegan option sub out the Greek yogurt for vegan mayo (we like the brand Vegenaise).
