Equipment

Food Processor

Ingredients

  • 5 fresh figs
  • ½ cup pistachios
  • 1 tbsp honey (use maple syrup or agave for Vegan)
  • ¼ cup walnuts
  • ¼ cup almond butter (or nut butter of choice)
  • 1 tbsp ground flax
  • 1 tbsp chia seeds
  • 1 cup oats
  • 2 tbsp vegan dark chocolate

Instructions

  • Chop figs and add to a food processor with 1 Tbsp pistachios, honey, walnuts, almond butter, flax and chia seeds.
  • Process until all ingredients are incorporated, pausing to scrape down the sides.
  • Transfer to a bowl and fold in oats, cover and place in the refrigerator for at least ½ an hour. Chop up the remaining pistachios.
  • To form the balls scoop about 1 tablespoon of the mixture and with wet hands roll into a ball, then roll in the chopped pistachios.
  • Place on a parchment-lined plate. Repeat until all of the mixture has been used. Place back in the refrigerator to firm up.
  • The mixture will be wet but don’t worry the balls will harder in once they are cooled. I let mine sit overnight.
  • In a microwave-safe bowl add chocolate and cook for 30 seconds at a time until all of the chunks have melted.
  • Put a little of the melted chocolate on a spoon or fork then drizzle the top of each ball.
  • Place back into the refrigerator for at least 10 minutes for the chocolate to set up. Then enjoy!
