Banana Baklava "Nice" Cream in a serving bowl

A healthier alternative to dairy ice cream, this recipe for Banana Baklava Nice Cream is made with just 2 ingredients, frozen bananas and almond milk. You could just stop right there and eat the ice cream as is but why do that? We topped this dessert with the flavors of our fav Greek delight, Baklava. Plus no ice cream maker required!

This is our go-to dessert recipe for the summertime when we want something cool and refreshing.  When you haven’t eaten all of your fresh bananas and they’ve started to brown, unpeel them and store in an airtight container/freezer bag.  This is the main ingredient of the dish. You can freeze the bananas whole or chop them into chunks before freezing. They should last for about a week in the freezer.

When you are ready to make your “nice” cream just add your frozen bananas to a food processor with a little bit of almond milk and watch the magic happen. The bananas will start by turning crumbly and you may think you need to add more liquid but don’t! It just takes a few minutes for the crumbles to turn perfectly creamy and smooth. At this point, you could add in other ingredients like cocoa powder to make it chocolate flavor, or other frozen fruits but for this recipe, you are basically done!

Transfer the mixture into bowls and top with cinnamon, chopped walnuts and drizzle with honey. The nice cream will have a soft serve, custard texture. If you prefer a more scoopable texture then place the nice cream in the freezer for at least an hour before topping and serving.

The base of this dish is also very customizable. As we mentioned you can turn it into chocolate flavor by adding cocoa, stir in Greek yogurt, swirl in some peanut butter, top with fresh fruit, other nuts the options are endless! Ingredients
  

  • 2-3 frozen bananas cut into small chunks
  • cup unsweetened almond milk or any non-dairy milk of choice
  • 1 tsp cinnamon
  • ¼ cup chopped walnuts
  • drizzle of honey

Instructions
 

  • Place frozen banana chunks in a food processor, add almond milk, blend until smooth.
  • Transfer to bowls and top with cinnamon, walnuts, and honey. For a more scoopable ice cream texture place in the freezer for 1-2 hours before serving.
